  Why not just use an ordinary B&W film such as Delta or T-Max or Neopan, 
all of which are available in 120 format.

  Another alternativve might be kodak Tech Pan.  It has extended red 
sensitivity, but not into the IR.  It can be developed several differnet 
ways, and has perhaps the finest grain of any film in the world.
