It partly depends on how easy it is for them to customise a process.  If 
they just feed everything through a machine set up for a standard BW 
process then you may be stuck with it, although they should still at least 
be able to do a push or pull process which gives you a couple of options.

Basically the less automation they have, the more they can possibly 
customise a process for IR. You might also ask them if they use different 
developers. If so, find out which ones and I'm sure a quick poll of the 
list will give you suggestions on which one to go with.

Be nice to them, smile a lot, and try to take the line that you are helping 
them expand their range of services to pro photographers. If they are 
amenable to the idea then you will get a lot of benefit from it... but  may 
also tell you to jump in the lake. You never know unless you try  :)  But 
sort out your film speed roughly first before you start making changes, 
that way you'll know which direction you need to head.
