If all you want to do is to see 3-D video in real time, there is an easier
and probably a cheaper way to do that without the use of a computer. Since
you have already two video cameras, all you need to get are two small and
cheap monitors or TV sets (Radio Shack, for example.) Hook each camera to
one monitor, place these side by side, get a simple mirror stereoscope to
see these in stereo, and you are in business! This is a set up that I have
successfully built and used about 20 years ago!
Incidentally, you should secure the 2 video cameras together on a sturdy
movie tripod with swivel head.
