The basic sync stripper chip is a LM1881, made by National Semi 
(www.national.com) and others.
The spec sheet is at the National web site, in acrobat format.  Video
switches are in most electronics catalogs, like Digikey
(www.digikey.com)

The 1881 has outputs for both even and odd field, so it should be pretty
simple to set up to shuffle the two video streams together.  This is a
pretty rugged IC, even I haven't blown one up yet.  Its the guts of the
LC shutter glass electronics.
