Not a safe thing to do.  a small difference in ignition time, weight,
fin alingment or other items would almost always result 
in an out of control flight that could hurt someone (but if I got in on
video, then I could send it to America's Funny Home Video and get 
$10,000 :)  )

A single long rocket would be safer, but it would have to carry two
cameras, plus it's own weight so I doubt that it can be done using
modle rocket moters.  High power rockets can lift several pounds
of payload and are usually 6 to 20 feet long anyway so I will leave
it up to them and stick with 2d for now.
