That's because Internet email in general does not recognize most special
characters (or binary). Some mail programs can handle special control
sequences, binary encoded as ASCII, etc., but for that to work both the
sender and the receiver of the mail message have to be using mailers
that handle these features (the same way). If you want the world at large
to understand you, it's still necessary to stick with plain old ordinary
text characters.
