In a practical sense this statement is true but you can get around 
the problem at some cost and with effort by going to a larger format.  
Certainly medium format helps and 4x5 really does it for normal 
lenses (lenses with focal length = format diagonal, 80 mm for medium, 
150 mm for large).  You can also go to longer-than-normal lenses in 
35 mm format.  The trick is to reduce the angle subtended by the grain 
at the eye if you can't get the grain size smaller.  Personally, I'm 
happy enough with ASA 25 Kodachrome in 35 mm so that's what I shoot.
Also, if you project rather than use a viewer, you're unlikely to see
finer grain.
