Just as a data point, the Kodak Cineon system digitizes motion picture
film, allows for touch-up, and then can re-image back to film.  The 
system is so good that it can scan film with one grain structure and
make it match film with another grain structure.  This is useful
when your 2nd unit shoots on different film stock than the rest of
your picture.  Of course, the system is big, and expensive and only
a few of the scanners exist in the world (Hollywood, etc..) but
it is used quite often to remove things from scenes that would
be difficult to re-shoot.
