Here is the difference between these two terms, as I see it:

Stereography: Action of producing stereograms (another word for
stereo photographs or stereo pairs).  Derived from the Greek root
graph- (for verb) or gram- (for object), meaning "to write".  Hence
stereography is the action of writing in 3-dimensions = producing
stereoscopic pictures.  More appropriate for putting emphasis on 
creating stereo pictures.  A good name for a stereo club (as in 
Detroit Stereographic Society) whose members concentrate on taking 
stereo pictures.

Stereoscopy:  Action of viewing stereo images.  Stereoscope is
another word for a stereo viewer.  Derived from the Greek root
scopo- meaning "to look" at.  If we want to include include passive 
entertainment (3d movies, VM, etc.), in addition to recording
stereo pictures. stereoscopy appears more appropriate,  National 
Stereoscopic Association is a good name for a society that was founded 
by stereo image collectors.
