Simple.. it doesn't ! 
I seem to remember some discussion on this video a while back..

If this is the same as the ones I've seen here in the UK then it isn't
a hologram rather its a single image projected onto a concave surface.
Because the image is a face and the surface concaved the human brain 
has difficulty "believing" what it sees (i.e. it knows that the tip of the nose should
be physically nearer than the rest of the face but the concave surface is making
further away).. and so it inverts the image to what it KNOWS it should look like
and so it looks 3D, especially if you move side to side while looking at it .. really wierd !
