I would highly recommend John Fielder's  PHOTOGRAPHING THE LANDSCAPE: THE
ART OF SEEING. Englewood, Colo.: Westcliffe Publishers, 1996. 

Although stereo is never mentioned, Fielder photographs and shoots for
OUTDOOR PHOTOGRAPHER magazine and this book contains excellent images and
concepts for photographing the landscape.  I find myself going back to it
over and over for ideas.  I especially like the fact that all of the
images are in color...he even has a nice comparison, taken 15 seconds
apart using sheet film, of the difference between Ektachrome and Velvia.
Also has great examples of different lighting possibilites.  Except for
the material on large format and different 35mm lenses,nearly all of
this is applicable to stereo.  It sold for $30 paperback.  You might check
amazon.com too.
