Since it's digital, can the file of your photograph be specially color +
contrast calibrated to be output to a specific film stock of your liking
such as Kodachrome, Velvia, RDP III, etc., or do the digital
service labs have to use a specific film stock that works
with their equipment?

I work with a Polaroid 8000 film recorder. The operator is able to select 
from a variety of different "film tables" that correspond to film types. 
Choices include color negative films (such as Kodak Gold 100) E-6 films, and 
even B&W negatives. Sadly, there are no film tables available from Polaroid 
for Kodachrome.

With enough trial and error, it would be possible to write a custom film 
table for Kodachrome.
