using IR photography to see water content distribution

Hi

I work in a Food Eng lab and I want to try to take IR pictures (B&W) of some 
foods that present water content profiles (e.g, french fries, dried 
apple, etc). 

Does anyone know if I will be able to see any relation between water 
content and gray values? For examples, areas with higher water content to 
present a stronger gray color than areas with a lower water content ?

I was looking for scientific applications of IR photography but I 
couldn't find anything. Does anyone know any simiar application ?
