You can make a small tent frame out of small fiberglass rods and
shock cord that fits inside a large conventional changing bag.
Take a look at the tent pole designs of a simple dome tent for
the general idea -- the two poles are crossed in the center, held
together with a small rubber O-ring, and you use the shock cord
to tension them so they stand up like a pyramid.  Unassembled
it's just a couple of sticks and some shock cord, so it doesn't
take much space.  Stick it into the bag unassembled along with
the film and camera, then put it together to hold the bag up once
everything is zipped and your arms are in the sleeves.

When I'm in my van instead of on my bike, my kit also includes a
square of 1/8" neoprene rubber sheet the same size as the
footprint of my changing bag -- that keeps the bottom flat when
you move the bag around, so things don't roll around on moving
cloth, very handy when you're trying to hand-rewind a roll of
35mm that had the tape come off the spool, since you don't have
to fumble around trying to find the top of the snap-cap cartridge
after taping the film onto a fresh spool.
