This is a good one. I do a lot of 70mm EIR aerial photography and what you're experiencing has got me totally confounded. My first guess would be some sort of camera malfunction but the variability of your exposure problem seems to rule that out. How exactly is the camera oriented in the plane? Are you pointing it out the window, or is the camera mounted so it is pointing straight down? Is there some sort of obstruction in the way? A loose lenshood that occasionally blocks the lens? I'm just guessing but it sounds like something is physically obstructing your lens's view of the landscape. We had a similar problem with our Rollei (bad vignetting) due to a slightly misaligned camera/airplane mount. Once we properly aligned the camera with the belly pan of the airplane, the problem went away.
