EIR Color Mapping and Flowers

I'm trying to plan a setup for my first EIR shoot but I'm a little 
confused by the spectrum color mapping of EIR.  I've read Michael 
Wurtz's brief on the CoCam page but certain aspects he describes 
don't seem to jibe with various EIR landscapes I've perused. 
Specifically, he describes most of the middle of the visible 
spectrum, green, red and yellow, as being mapped to green and cyan, 
when shot with a yellow filter.  But in the EIR shots I've looked at 
flowers seem to come out with close to their natural colors, or else 
with a different color shift than predicted by Michael's diagrams. 
What's going on?  Is the IR reflectance of the flowers skewing the 
color mapping?  I thought flowers didn't have nearly the IR 
reflectance as green, growing foliage.

I'm looking to recreate a shot I did with HIE, with my daughter 
standing among rose bushes with a variety of colored blooms. 
Shooting HIE, the different colors of roses came out in a variety of 
mid-range greys, but didn't have the Wood white of the stems and 
leaves (this was with an 87c).  So I'd assumed the blossoms don't 
reflect IR to any great extent, but now I'm not sure.

What I'd like to shoot is a false-colored version of the same 
composition, with the IR-reflecting foliage mapped to a firetruck 
red, her skintone represented relatively accurately and the various 
color blossoms (red, yellow, pink and white, mostly) shifted 
willy-nilly to other hues (white staying white, though) but showing 
an interesting variation.  I'm calculating that my B+W O40 (Wratten 
16) will shift growing green foliage pretty much to a pure red, but 
what'll I get for strong primaries of the flowers?  A range of 
greens?
