You are correct that toeing in the cameras (if you point them at the
correct angle) will achieve a similar result as the off-set film gates
on stereo cameras. However, this introduces the (potential) problem of
changing the sizes of the objects on the edges of the film. Stereo cameras
keep the film for the 2 images on the same plane so there is not a problem
with size mismatch. But with toe-in the film planes are no longer in the same
plane. This will not always be a problem, it depends on factors such as the
focal length of the lenses and how close objects are to the edges. Although it
often works just fine, but I would discourage beginners from doing it as I
believe it is a bad habit. If you like doing it and you get the results you
want, I won't argue with that.
