What image editing software do you have?

You can cut and paste bits of road, etc, from near the areas you want
to cover up.  This works ok if there is not much complex detail behind
the cars, and if you don't look too closely.

A better idea is to to take each shot several times, so you always
have several to choose from.  If there are lots of cars and people
moving around, then it might not be possible to avoid the problem.
That's where rotating cameras/lenses beat stitching, but even they
have problems with moving objects being stretched or shrunk.
