This web site by James Rigg shows all the pan software out there and there
reviews...

However, there is limitations to stitching...one of them being file
size...if used on a PC in windows 98.  I had good luck with Panorama factory
by John Strait...its share ware...

It is always best to shoot something you know the size and look of......
like your backyard....then experiment stitching those shots together so you
know how close your final product is to what you think it should look
like...
