Sorry I can't agree. A shallow DOF can give pleasing results, with the
right subject. I'm not saying every picture should be shot at f/3.5, mind
you.

Regardless, a P&S camera may not give you manual aperature control but that
doesn't mean you won't have depth in your shots. Its program will make a
choice of shutter speed and aperature that will probaly be fairly close to
what you would have chosen under the same conditions, unless you tend to
shoot at 1/30th of a second to get more DOF. My P&S seems to like
reasonable aperatures, around f/8, and will use them when it can.

I'll say again that a twin P&S rig is not a replacement for a Realist. It
offers light weight, quick shooting, hyperstereo, and full frame format. If
you are looking for a 'Super Realist' then twin SLRs are the only option,
IMHO.
