I should think this would look VERY odd. Not only would the background have no depth, as you noted, but the subject's position relative to the background would not change in the two views, which would create an unnatural relationship between them. There's even a possibility that the background might actually appear to be "in front of" the subject. The subject would also look slightly odd, since this technique is not the way stereo pairs are usually shot. Normally the two views are offset on a flat plain relative to the subject. By rotating the subject instead of shifting the camera, you are in effect "circling" him/her/it (ain't this political correctness a pain?). This would in itself create a slightly "wrong" feel, especially combined with the very wrong feel of the background.
