I once had a terrific little gadget (totally mechanical - no batteries)
which was like a cable-releas, except that it was "pushed" by a
wind up type mechanism. Seems like you could set it anywhere from 5 to
30 seconds or so. It eventually broke and I haven't looked for a
replacement (although I'm going to be at one of the major photo
places in Dallas tomorrow (part of which specialize in digital image
equipment)) and could see if they are still being made - probably a
look in shutterbug or something similar would be enlightening.
