Well, this wasn't me; I don't usually sound this intelligent!

While it's true that most films use mattes these days, I'm not sure that 
carefully crafted composites couldn't be done in stereo, either through the 
use of twin backdrops (expensive) or by making certain that the paints were 
"distant" enough so that no one missed the lack of parallax.
