Yes, yes it matters. And yes, there are compromise binaural systems which do 
not contain external ears. Contact Neumann and Sennheiser for details, they've 
both done extensive development here.

With regard to stereo microphones and earlier posts, there are several summing 
and difference system, including M-S and X-Y. Each has its strengths and its 
shortcomings, and they are largely situationally specific and a matter of 
individual preference.

With regard to attempting to record four channels of sound with twin stereo 
walkmen, I'm afraid it is not that simple... the overwhelming majority or 
multichannel film sound is the result of taking mono recordings and 
placing/panning them into a channel/combination of channels to simulate aural 
placement in the soundfield... summing and difference systems are really not 
appropriate for rear channel information.
