Yet another mounting question

The mounting instructions that came with the RBT Realist-format mounts I
purchased from Jon Golden recommend setting to the 7-p 'European' format -
can anyone tell me why, in terms I can assimilate?  I've gotta admit, I'm
not up on the science angle of stereooptics as much as I am on the
'ooh...ahh' angle.
