First:  Not every one.  Perhaps the majority in the USA.  Second, there
is more to the answer than just "that is the STANDARD".

Again, we need to be careful to differentiate the two different issues:
1) Using twin camera rigs, 2) Using the 2x2x2 system to mount the slides,
whatever the taking camera system is.  I use twin camera rigs too, but
I ask my film to be returned uncut and mount the slides in 101x41 mounts.

There is no need to mount manually only if you accept the quality of the 
commercial mounting.  Most people who do 2x2x2 projections (as Tom 
indicated he is interested in doing), do remount their slides.
