Of course hyperfocal distance is used in "flat" photography, but
it is standard practice for stereographers to maximize depth
of field, unlike in "flat" photography where this is not the norm.

As to why this convention is followed there are alot of reasons,
which I don't 100% follow myself.

No one said otherwise! You have to remember it's auto-focus P&S,
that don't lend themselves very well to stereo photography.
