Yes and no... the same problem exists in camera with a fixed back, i.e the plane of
focus is very narrow at one specific point and we normally get around this by using
smaller apatures to increase the acceptable depth (CoC).... :)

In some ways the tiltable back could help with focus because the focal plane will
no longer disect the image at the same angle as the cameras film plane but will be 
turned more vertical along the height of the object. This means you should need 
less depth of field to get everything in focus (assuming the object is taller than 
it is deep:))
