I have done aerial photography from my Senior Telemaster radio controlled plane, with an old Minolta point-and-shoot.  It's not a trivial technique, but it does work.  Engine vibration is indeed a factor.

The magazine Model Aviation had a letter about stereo pairs from such planes, the author indicated it worked well.  It was done with pictures taken in rapid sequence, as suggested here.
