It depends on how far your subject is... You can get an idea by
noticing how fast things are changing (parallax).  If the clouds
are close or if you are in take off or landing situation then things
change quickly and you might need the 3fps.  But if the clouds
are far away then you could take shots a few seconds apart.
A common mistake is having too much parallax or leaving
too much time between shots which makes the resulting
pairs difficult to mount/view/project.  It helps to bracket.

No, never had a problem.  The main problem is finding a good
seat in the plane, i.e. not too close to the wing (so the wing
is not in the picture) by the window, a clean window, sun
in the back, etc.

A normal lens works well.  Wide angle lenses might pose a
problem.
