A motor drive, well nice, is not necessary to do this.  I have done this
several times with non-motorized SLR cameras.  The amount of time it takes
to advance the film between frames is often adequate, although it may be
necessary to wait a while longer.   Clouds that are near the airplane can be
done with a relatively short interval, but if you expect any depth in shots
of the ground (mountains, cities), you have to wait quite a while for enough
parallax.

With experience, you can judge the amount of wait by the amount of shift you
see in the viewfinder while comparing foreground (the bottom of the frame)
with background (at the top of the frame).  Otherwise, learn by shooting
several frames sequentially and evaluating when you mount them.  You do not
need to use a motor for the sequences, manual advance is usually plenty
rapid, often too rapid unless you hesitate between exposures.  About the
only thing you might need a motor drive for would be if you were taking
shots of the airport and other planes on the ground while taxiing before
takeoff or after landing.

Basically, the higher you point the camera (toward the horizon), the farther
away the subject matter is, and the longer you have to wait between
exposures to realize a reasonable amount of depth.  I have taken stereos of
sunsets from aircraft this way, when there were mountains on the horizon.
To get any parallax at all, it was necessary to shoot forward for the first
exposure, and then wait several minutes (!), shooting toward the back for
the second.  The problem here is that the sun cannot be too close to the
horizon, or it will appear to have too much vertical displacement between
shots.
