Am I right in thinking that the only way of viewing 3DVideo movies taken
with a polarising filter is through a projector with corresponding
polarising filters and polarising glasses?

Putting polarizing filters on the camera lenses has nothing to do with the
3-D aspect.  These are used for such things and making sky a deeper blue,
controlling reflections, etc.

On the projector, they filter each eye view in the opposite direction.  The
polarizing glasses allow only the image intended for each eye to go to that
eye, so that the left eye sees the left eye view and only the left eye view,
and vice versa for the right eye.  Whether or not polarizers were used on
the camera lenses has nothing to do with this function.
