Yes, infact all the packages I've used so far only display a single field
during the preview/editing stage. During capture I also only get a single
field preview display, so I cant actually watch or edit anything in actual
3D on screen (unless it anaglyph of course ;)

I assume you mean that the even-lines becomes the odd-lines etc, which has
the effect of making the video psuedo in 3D (and flickery in 2D). For
digital encoding there is ususally an option in the encoding software to
set the dominance.
