The real scoop is to be as careful as you can.  Changing bags are not
necessarily IR opaque.  That being the case, it would seem to be a safe bet that
one could load in a changing bag in the shade (think of how shade is rendered on
your film).  I have tried the "change film under my coat" routine and have had
some success - meaning that I have also had some failure.  This is not
comforting - the fact that I might trash a frame(s) that would otherwise have
been a winner (been there, done that).  You'll find that problems will show
their faces at the exact wrong times, so it's the best policy to take the extra
half-step of taking care of what you are doing.
