What I might do is charge them a commercial rate, based on how long it would
take to do the shoot and figuring your costs for film and processing.  Then,
show them the proofs and charge them for whatever they order.  Do not sell
the proofs individually; offer them only as a set AFTER a minimum order of
finished photos has been met.  Otherwise, they may want to get away cheap by
purchasing the proofs and nothing else.

If they want to keep the proofs for a week or two to make their decision,
ask for a non-refundable security deposit.  When they return the proofs,
they can apply the entire deposit toward finished photos.  

To prevent them from copying the proofs, stamp your copyright notice on the
back along with your phone number.  Also stamp the front with "original" or
"proof" or "copyright."  Bunny's Miracle Ink, phone 1-888-BWS-INKS
(http://ourworld.compuserve.com/homepages/bwsink/) makes a special kit for
this purpose.  It's a fast-drying, non-smearing ink made especially for
photos.  And with their special remover, you can remove the imprint from the
front of your previews later and sell them.  The kit comes with a stamp pad,
ink, remover, a stamp (original, proof, or copyright) and a permanent marker
pen.  

To get a custom stamp with your name, phone and copyright, go to Office Max
or another office supply store.  I bought one there for under $10.  Or else,
use a permanent magic marker (Sanford Sharpie fine point is what I use) and
just write the info.
