I have some fabric that I've been meaning to test for
IR-proofness -- heavy duty black rubberized polyester, which I
use for cycling bags.  I had been planning to make a small bag
of the stuff and stick some IR film in it, but it ocurred to me
this morning that I could simply cut out a 3 inch square of
fabric, stick it in a gel holder, and see if my NightShot camera
can see anything through it.  

My own thought on a changing bag closure is that a rolled-down
top, like a dry bag used by campers or boaters, would be much
simpler and more durable than any zipper, but I'll have to see
how light-tight it is.  It's definitely an easier bag to make
that way -- I use roll-down tops on most of the bags I make for
various uses, e.g. my laptop computer case, lens bags, an
inuslated film bag, etc.
