Keep in mind that the process of exposing film (any film, not
necessarily limited to IR film) is a photochemical process. Yes, light
(IR radiation included) initiates the reaction, but even in the absence
of light, the compounds in the emulsion react with each other over time
and change the way the film responds to light. Freezing the film
doesn't save it from exposure (you do that simply by leaving the
canister lid on), but it does slow down the unwanted chemical reactions
that affect the emulsion.
