Yes, the amount of fogging does seem to vary between cameras, so you will have
to test. (Shall we take a survey to see if the cameras made on a Monday fog
more than the cameras made on a Wednesday? ;-)  )  However, what would be nice
about using the Pentax is that you can dedicate it to IR, for example, by
mounting an IR gel filter between the film rails. Also, my guess is that your
Pentax lenses have IR focusing marks, whereas very few EOS lenses do.  When
you're starting out, it's nice not to have to experiment with both focusing
and exposure.
