My experience is limited thus far, but for what it's worth, I take "standard"
35mm shots of each side of a stereo slide, get the film processed "unmounted"
and then cut/mount the result. Have only just started doing this, I'm still
tweeking the process, but it seems to work fine. Others will likely say how
it *really* should be done proper, but I can mention how the low-middle end folk
can do it.
I'm just using an el-cheapo used Spiratone setup with a Spiratone copy stand and
a Spiratone Dupli-Lite dichroic copy light source. I use Kodak 5071 duplicating
film that comes with color correction and exposure factors printed on the "batch"
that seems to work fine when those color values are dialed-in on the light source.
I'm using an f2.0 "normal" lens on the camera with a reversal ring. I'm still
experimenting with lenses, extender tubes, and my bellows (all used Spiratone
things, interestingly enough... they seem to be available and very inexpensive,
and generally seem to work okay). Mostly trying to characterize things so that
I can get a set of standard setups for exact copies with pre-set ratios for
editing purposes as well as straight-copies. Trying different lenses too.
I think others on this list use somewhat fancier copier setups (Honeywell "Repronar"
or some name similar to that).
One can make copies with costs being low to high, but the ease and probable quality
undoubtedly goes medium to high respectively as well. :-)

I have no idea about the professional stereo copier folk.

One of the advantages of using frame/beam-splitter technology (at least the Pentax
version which I have used) is that the slides are standard 2x2 slides. An el-cheapo
standard 2x2 slide copy will work for "stereo copying" -- gotten at one's local
photo place that handles slides.

P.S. - What can I use instead of Asbestos? That suit could be cancer causing....
