Interesting idea.

In that context, is there a good estimate of how the resolution of the
Kodachrome of the 1940's-50's compared to what's available today?

In the "film vs digital" discussions, a position taken by a few of the
participants seems to indicate that the current state-of-the-art resolution
in film is the minimum acceptable for stereo - but this level may not have
been available back when the stereo cameras were very popular.
