I would take one simple precaution when acquiring lenses in pairs.  Simply 
eyeball the apertures of the lenses at several different stops.  If the size 
of the openings look about the same, you probably won't have much of a 
disparity in exposure.  I wouldn't worry about any difference if focal 
length.  Needless to say, I'm  referring to lenses of exactly the same model.

I agree with George that the most useful focal lengths depends on what you 
like to shoot, but I have no doubt that I use my 28mm lenses the most.  Next 
comes the 40mm and 50mm (about the same), and lastly the 135mm.  My subjects 
are mostly landscapes and city scapes.  I don't do many people pictures for 
fun since that's what I do for a living!
