There are 3 explanations as to why most Salons insist
on 7 perf maximum size:

1. Don't have a "full stereo frame" capable projector.
2. Tradition
3. Screen and projector setup.

To explain:

Many salons prefer the TDC 716 projector over the 116 model.
Most people think that the 716 is a better projector because
it can take brighter 750W bulbs vs. 500W bulbs.  It is also
called the "Deluxe" model.  The carrier of the 716 projector
will only project 5p slides but most clubs have enlarged the
apertures to show 7p images.  It cannot be enlarged further.

IMO, the 116 is a fine machine and the wider carrier is a big
plus.  I have 750W bulbs in mine (now it belongs to our club) 
and it is quite bright.

Generally, clubs prefer to use a TDC projector over a Brackett.
One issue with the Brackett:  I think only one side of the
Brackett Dissolver should be used for judging, not both.

Tradition:  Traditionally people have used 7p slides as the
maximum width.  Before RBT mounts became widely available,
7p was the widest format.  Personally, I think it is time
to move forward.

Screen and projector setup:  Most clubs use a 70" (square) 
DaLite screen and they set screen and projector to barely 
cover 7p.  This way they utilize more of the screen area.  
If they adjust things so that 33mm slides fit in the screen,
they end up with smaller images.  I cannot blame them in
a regular meeting but for Salon judging obviously there
is more flexibility.
