Probably the very best "site" for information about macro 
stereo photography is the Yahoo group Macro3D. Simply go to 
the following URL and join:

http://groups.yahoo.com/group/macro3d

There are currently 129 members representing all forms of 
macro stereo from scientific SEM images to hobbiests designing 
and building their own cameras/lenses.

As for your specific question - yes there are people using 
single cameras and either macro lenses or bellows. It is no 
more complicated than taking one image, sliding the camera 
over some amount, and taking the second image. Of course it is 
as complicated as having a totally staionary subject, moving 
the correct amount for the conditions, and limiting the total 
depth of the scene.
