OK, I had completely misunderstood - you're referring to the observation of
grain as an *indicator* of resolution.

What if you can get a *large* print or transparency, as opposed to a smaller
photograph? For stereo use it might require use of a different kind of
viewer, but couldn't you use this method to take advantage of whatever
resolution the digital imaging process offers, despite the resolution
(pixels per unit area) limitation of current printers?
