Yeah, I suspect telling people to refrigerate film is primarily a CYA
precaution since you don't know where the people who buy the film will be
living or visiting. It is also a good way not to do something harmful
unintentionally. For example, in my home, the light comes in the back window
for the last few hours of the day, but it is very strong and bright. Anything
left on certain counters and tabletops in the sun path can fry. If I had the
type of job where I was gone from early morning to early evening, I would
probably never know this and could easily have used this area as a spot to
keep a few film canisters handy for days if not weeks. (I know it is a bad
place to leave certain items as I left the remaining bottle of a rather decent
wine there and it was well-cooked the next day.)
So I guess refrigeration is best described as a good idea as a general
precaution, a safe place to keep the film out of harm's way, and a way to
minimize any cumulative effect, but not a constant necessity.
PS. Maybe the woman with the film has a garage or luckily kept them in one of
those spots in the car that seem to stay a little cooler than others.
