Field of view, perspective, etc.

After shooting Realist format and twin 24*36mm, I started thinking about
image ratios. I definitely prefer the rectangular format of 24*36mm. It
seems to more closely match the way our eyes see. But judging from some
quick experiments, with a 35mm lens it still only covers around 1/3 of the
horizontal field my eyes see, or around 1/2 if you ignore the extreme
peripheral areas. So instead of 1:1.5 perhaps a better ratio would be 1:3.
I suppose this is "panoramic", and would be impossible to view without some
sort of custom and costly optics.

In a perfect world I'd like to look into a stereo viewer that provided an
image as wide as my field of vision. Anyone know how many degrees that is,
and how it compares to that offered by a viewer such as a Realist red
button? I'd guess it's around 45 vs. 60 degress. Looking at images in a
viewer is thrilling, but it is like looking through a window rather than
being in that world.

Is it possible to take and view stereo images that approximate the eyes'
field of view and perspective? How could it be done?
