Most SLR's keep the aperture wide open during focussing, metering, etc., and 
just close it when you press the shutter.  This allows you to have maximum 
light in the viewfinder while setting up your shot.  The DoF preview simple 
forces the aperture closed so you can see what's in focus and what's not 
while setting up.  The drawback, of course, is that the image in the 
viewfinder will be much darker.
